Good fats are monounsaturated fats in oils and the polyunsaturated fats in fish and nuts. Carbohydrates in Mediterranean dishes come from unrefined, fiber-rich ingredients such as beans and wheat. Always research the source of the fats and carbs in a recipe if you are unsure about the nutritional values and how they might affect you.
